ROASTED PINEAPPLE & LIME CURD TART
The Ingredient List
Lime Curd Ingredients- limes, sugar and eggs
Juice the limes until you have 1 cup of juice
Chill the lime curd at least 2 hours before using it to make the curd
Roast the pineapple with the brown sugar and vanilla bean. Cool to room temperature
Place the ginger cookies in the food processor
Process the ginger cookies until they are fine
Place the toasted macadamia nuts in a food processor
Process the macadamia nuts until they resemble panko bread crumbs
Toast the sweetened coconut until it's golden brown and cool before adding to the other ingredients
Place the nuts, ginger cookies, coconut and lime zest in a bowl and mix together. Add the melted butter
Press the cookie crust into a 9-inch tart pan and bake at 350°F for 15 minutes
The lime curd, baked ginger cookie crust and roasted pineapple
Spread the roasted pineapple across the bottom of the baked tart crust
Spread the lime curd on top of the roasted pineapple
Bake the tart until the lime curd is slightly firm to the touch
Let the tart cool then spread the Swiss meringue across the top
Use a kitchen torch to toast the Swiss meringue topping
SERVE THE TART WITHIN 2 DAYS
