apricot cake

If you love apricots then you love this cake full of apricot flavor.  It's sweet, tangy, and incredibly moist and perfect for your next party.

Puree the apricots in a mini food processor until the apricots are smooth. You should have almost  2 cups of puree

Step 1

Place the butter, sugar, cardamom, almond extract, and vanilla extract in the bowl of stand mixer.  Beat the ingredients on medium speed until it’s creamy and lighter in color.

Step 2

Add the eggs one a time, beating after each addition until the egg if fully incorporated.  Scrape the bottom and sides of the bowl.

Step 3

Add the apricot puree and mix on medium speed until incorporated. The cake batter will be a beautiful light orange color
