These Blackberry Financiers are light and buttery cakes with the perfect amount of sweetness. The bold flavor of the blackberries is perfect with the almond flour and nutty brown butter.

Oregon Blackberries Unsalted Butter Almond Flour All-Purpose Flour Egg Whites Granulated Sugar Lime Zest Kosher Salt

Ingredients

Sugar and Lime Zest

Zest the lime onto the sugar and rub the zest into the sugar with your fingers

Add the Dry Ingredients

Add the all-purpose flour, almond flour, and salt to the sugar and whisk until combined.

Add the Egg Whites

Whisk the egg whites by hand until they are foamy.  Add it to the dry ingredients and mix together.

Add the Brown Butter

Add the browned butter to the batter and fold in the butter until combined.

Financier Batter

The batter will be thick and creamy.  Divide the batter evenly between 12 mini cupcake or muffin molds

Ready to Bake

Add a blackberry to each cake and gently press into the top of the cakes. Bake the financiers for 12-14 minutes

Cool the Financiers

Cool the financiers for 10 minutes in the pan and then finish cooling them on a cooling rack.

These cakes are great with coffee or tea as an afternoon snack or for dessert.
