Place the granulated sugar, brown sugar, and butter in the bowl of a stand mixer. Cream the butter and sugar until it is fluffy.
Scrape the sides and bottom of the bowl. Add each egg one at a time, beating after each addition until incorporated.
Alternate the addition of the dry ingredients and the buttermilk, mixing on low after each addition until the ingredients are incorporated.
Add the chopped apples to the cake batter and mix in by hand using a spatula.
Scrape the prepared batter into a prepared springform pan and smooth the top with an offset spatula.

Slice the remaining apples and arrange them on top of the cake batter. Bake the cake for 60-65 minutes until done in the center.
Remove the cake from the oven and allow it cool in the pan. Then remove the sides of the pan. Allow the cake to completely cool before serving.
